Bikini Recipe

Makes enough for 10 guests

To make the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Premix (produces 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Combine every items inside a pan, bring to a light boil, agitating until the sugar dissolves. After that, remove from the burner allowing it to cool fully. Decant to a sterilised bottle, cap it keeping it in the refrigerator, where it will keep for up to a month.

For the Batch Mix: Mix the specified liquids into a big jug, leave to sit for one hour, then strain preferably using muslin, to ensure it's fully clarified.

When ready to serve: Measure 85ml from the cocktail base into a stirring glass containing ice, gently stirring lightly for a minute until cold. Pour to a chilled martini glass or similar, decorate with some cranberries and complete it with a quick spritz of the essential oil over the top.
